Its because of the movies production era. Wireless was madness in the 1977. To unlikely to be common place. But in Phantom Menace, wireless was the future.

To be fair the Millennium Falcon is basically a space 6 wheeler truck.
It's 2017 and all aircraft still use wired communication devices. It's the only way for it to be truly secure.
The wire is only there so it doesn't get lost.
