As someone with Celiac Disease, I always have to bite my tongue when people say that have gluten allergy at work

@Trillian , As someone without it who had a friend who did, Gluten-Free pizza dough from Blaze Pizza is purty good. Tastes like crackers.
@HonestFPRating, celiac disease is a true allergic response to gluten that is pretty harsh and occurs in about 1% to 2% of the US population; whereas gluten "sensitivity" is a strange, and recent, phenomenon which affects upwards of 30% of the US population and is neither systemic nor an immune mediated malady. There is some evidence that there is an infectious component, a member of the normal gut flora gone rouge, but nothing definite.

@Trillian , Yeah, my grandfather has it, every time he comes over we have to eat gluten-free everything, don't take this the wrong way, but I seriously pity you.
@chicken bhutt , actually the Dr that originally said that no celiac gluten sestivity was a thing conducted an experiment disproving that theory and has gone on record as saying that it is a psychological issue not biological.

@Trillian , I have it too and one of the hardest parts is when you meet new people who don't know anything about it and have to go through the whole explanation for the thousandth time and then answer the 1 million can you eat this questions
@Bellith, true, and it appears the majority of the sensitivity cases are psychological, the microbial subset of gluten sensitivity has a very specific and reproducible phenotype that follows the primer/promoter model of metabolism that ultimately results in a significant increase in CO2 production in the presence of gluten. People with this particular presentation will be cured after a course of oral antifungal meds.
@chicken bhutt , it's actually not an allergic response. It's classified as an autoimmune response since it is a genetic autoimmune disorder. But this has been one of my biggest pet peeves for years.
@Trillian , yes, you're correct, I admit I was being lazy by say "allergic response", sorry about that, my experience in attempting to explain autoimmune processes so often devolve into "it's like an allergy to yourself" that I've just skipped right to calling autoimmune processes "allergic responses". But that's not a very good excuse, my apologies!
@Trillian , my best friend's brother is celiac and had to eat tiny sad looking loaves of bread until "gluten sensitivity" became popular. Personally,i don't care if other people avoid gluten because it opens up the market and creates more dietary options for actual celiacs. If it means that he gets to eat bread that doesn't look like a starving duck would reject it then I'm not going to be the one telling the public that they needn't avoid gluten! :P
