@Richard Cypher, those were the stunt horses, so of course they can pull something like that off
Even historically speaking, you probably didn't see people killing horses because they could become either new mounts for future warfare or were tradable for either coin or favour with lords back home.
@Sambob, not to mention it is pretty difficult to actually take down a horse.

@Sambob, True up until the mid to late 19th Century and the final forms of cavalry and dragoon soldiers. Unfortunately, downing a horse proved an easy way to kill or capture the rider, so many nations armed their cavs with handguns suited to the task. The Colt Walker revolver and M1911 were both designed for cartridges capable of stopping either the man or the horse. And once Gatling guns and early machine guns saw use, cavalry became entirely obsolete.
