This is a supersaturated solution of Sodium Acetate. It is normally a solid at room temperature, but because of its supersaturation, it does not freeze until you introduce contaminants that allow the solution to crystallize onto the surface of the contaminant. Since the creation of bonds is exothermic, the solution's temperature rises rapidly to about 130 degrees Fahrenheit. SCIENCE

He made a super-saturated solution. You dissolve something in water until it's fully saturated (no more will dissolve) then cool it. Then anything that can be a base, usually a crystal of whatever you dissolve, is added. And huge amounts of crystals form very quickly.

This is actually him overreacting, if you do some quick research, it doesn't heat up at to 130 degrees, but is instead like slushy snow at "warm pee" temperature.

The thing he's putting his hand in is a mixture that is supposed to make salt crystals form a round his hand but he made the mixture wrong and when he put his hand in it started to burn really bad.
@Yuh, I'm pretty sure this is a super saturated solution of some sort that has an exothermic reaction when it is disturbed. It's used in reusable hand warmers it gets really hot and solidifies so I'm assuming he could not pull his hand out.
