Look I like smelt as much as the next guy, but please if you're going to take the heads off dispose of them properly instead of trying to cook them.
@WhiteR, I am a little uncultured on what a smelt is, but don't the upturned jaws mean they are sardines? (Looking to expand cooking horizons. not trying to start anything, I'm honestly curious)
@fudsterly, They are a freshwater sardine common in the great lakes. Mostly they are used as bait or beheaded and fried like shrimp.
@WhiteR, I didn't know there was that much variety in them. I'll have to try them out next time I am making a fish broth. Thanks for the info!
@fudsterly, I've only ever had them the one way, I can't make any recommendations for other cooking methods.
