@Quoth the Revan, I have celiac disease so if my food even touches gluten it causes an autoimmune reaction. So a place like subway my food will for sure touch gluten and won't even matter if the bread is gluten free because it technically won't be.
@Conman33, well I work at subway, and I can tell you we're very methodical about it for exactly that reason. We use clean gloves, a clean knife on clean deli paper on a clean metal pan (to avoid the white bread boards), etc. We're pretty extensively safe about it. But I understand why you wouldn't want to risk it.
@Quoth the Revan, yeah the problem is level of sensitivity. For most celiacs and gluten intolerant people that would work. I just happen to be super sensitive to gluten. Similar to a peanut allergy. Some people can't be in the same room as peanuts and some people can eat 20 before getting sick. Sensitivity varies.
@Conman33, fair enough I'm that way with poison ivy/oak/sumac. If I'm in an area that they even EXIST in, I may as well have been clothed in the stuff.
